Vegetable Fried Rice – easy and delicious

So I made this as a side to my honey garlic and ginger chicken. Vegetable fried rice is really easy to make

What you need

Rice
Carrots
Mushrooms
Celery
Green onions (scallions)
Green and Red Peppers

Chop all the vegetables (except carrots) into small chunks. Cut the carrots into thin slices. Just make cut as much vegetables as you want to add to the rice.

These are the vegetables I used but you can put in any veggies you want. First cook the rice, when the rice is cook grab another pot and put it on the burner on meduim head, throw in enough vegetable oil to coat the bottom of the pan. Once the vegetable oil is hot toss in the carrots. Let them cook for a few minutes to soften them, then add the rest of the vegetables and cover. When the vegetables are almost cooked uncover so the water can be boiled off, when the water evaporates add the rice and stir it around for a few minutes. This allows the flavour of the vegetables to infuse with the rice. When it looks good and cooked your done, that’s it.  You can add salt if you like, I like it without, but my girlfriend likes it with salt.

Honey Garlic and Ginger Chicken

I just made dinner, it was delicious so I will share the recipe with you. Keep in mind I am a simple person and I create things so the recipe is not exact, it’s for normal people like you and me.

 What you need

Chicken
Garlic
Ginger
Honey
Vegetable Oil

 Cut the chicken into bite sized pieces. Mince the garlic and ginger. Make a marinade by mixing vegetable oil to a ziploc bag or a tupperware container and then mix in the garlic, ginger and then chicken. Mix it up so the chicken is coated with your marinade and let it sit for a few minutes to allow the flavour to soak in. Heat up a frying pan at medium heat and add the entire mixture. Cook it until it is almost done and then (drain it if there is water in the pan) add as much honey as you want, cook it for another few minutes to glaze the chicken and your done.
